We are currently experimenting with Dr. Richard Smart’s high production trellis designs. Distillery: The engineering design was conceived in consultation with CITE-vid, a government extension pilot winery/distillery & vineyard, founded with Technical Assistance from Spain. Further design expertise was received from a Master Distiller of a major Cognac House in Cognac, France. The Payet’s traveled three times for extended research visits to Cognac, Vinitech in Bordeaux and Mendoza, Argentina, as well to Napa & Sonoma valleys in California. |
